I'd imagine they used LSTM or some other type of recurrent neural network. Has anyone heard more insight about this?

LSTM could definitely be a possibility. I've had good results using it for text generation tasks.

I'd think they'd have to use a language model that's trained on a diverse range of text data, so that it can understand various intents and respond appropriately.

I've experimented with NLP before, and while it does have limitations, it can definitely add a lot of depth to a text-based game.
